Kabsa
Ingredients
- 1 chicken - cut into 8 pieces
- 4 cups of rice - soaked in water
- 2 of bay
leaves
- 1 maggie
- 1 onion - cut it into small pieces
- 2 of chopped garlic
- 4 pieces of cardamon
- 5 cloves
- 2 of cinnamon stick
- 2 of dried
lemon
- 1/2 teaspoon of ground cumin
- 1/2 teaspoon of ground coriander
- 1/2 teaspoon of ground black paper
- 1 teaspoon of salt
- 1 can of tomato
- 2 pieces of carrots -cut
Recipe
- Fry onions, add garlic chicken and all the spices
- Stir the ingredients then add tomato and leave it for a while until it is
well done
- Then take out the chicken and put it in the oven
- Add rice and water on the mixture and let it on a low heat
- when the rice is well done, serve it with the chicken on the top

Saleeg
Ingredients:
- 1 chicken (Whole)
- 4 cups of rice
- 1 Whole onion
- 4 pieces of cardamom
- 1 tablespoon of salt
- 1/2 cup of powdered milk
- Butter- 100 grams
Procedure:
- Clean and cut the chicken into 4 pieces with skin.
- Put 8 cups of water in a pot; add onion as a whole, cardamom, and salt.
- Boil until the chicken is tender then take off the chicken, onion and
cardamom from the soup
- Set aside the chicken add 1 tbsp. of ground coriander, 1/2tbsp. salt, 1/2
tbsp. black pepper and baked until it become brown
- Strain Chicken soup and put back in the pot
- wash the rice and add it to the soup.
- Boil until the rice is tender and stir gently.
- When rice become sticky, dissolve 1/2 cups of the powdered milk in boiled
water and add it to the rice then add butter on the top
- Adjust the taste then served with the baked chicken on the top

Rice with Lentil
Ingredients
- 2 cups of red lentil- soaked in water
- 1 cup of rice - soaked in water
- 1 teaspoon of cumin
- 2 big cubes of maggie
- 1 teaspoon of salt
- 1/2 teaspoon of turmeric
- 1 chopped onion
- 2 of chopped garlic
Tamarind Sauce
- Soak the tamarind in water and then strain it
- Add cumin, salt, black pepper, and tomato cubes on the tamarind
Tuna Preparation
- Get a can of tuna and add chopped onion, garlic, chili, salt and black
pepper
- Heat the mixture on a low heat
Recipe
- Fry the onion, when it become brown, add garlic
- Then, add rice, lentil, other spices and add water until it covers the
level of the rice
- When the rice is well done ( you can tell that when both rice and lentil
are totally mixed together and you can't differentiate between them), add a
piece of butter and turn off the heat
- serve the rice with tuna on the top
- Add the tamarind sauce while eating

Biryani Rice
Ingredients
- 1 whole chicken - cut into 8 pieces
- 4 cups of rice
- 2 big onions - cut into round pieces
- 3 pieces of cloves
- 1/4 cup of oil
- 2 fresh tomatoes - cut into slices
- 4 cubes of maggie
- 1 teaspoon of black pepper
- 2 table spoons of powdered curry
- 2 pieces of cinnamon stick
- 4 pieces of cardamon
- 1 table spoon of chopped coriander
- 2 pieces of bay

- Salt - as needed
Recipe
- Fry the onion, when it become brown add the garlic
- Put the chicken, tomatoes, and all of the other spices
- Keep it on a low heat until the chicken is cooked
- Then, take the chicken out and put it in the oven
- boil the rice, and when it is half cooked add it to the other mixture
(tomato and spices)
- Cover the pot until the rice is well done
- Finally serve the rice with the chicken on the top

Ingredients:
- 4 cups of Jareesh - soaked in water
- 1 onion - cut in small pieces
- 2 grams of Lamb - cut in cubes
Procedure :
- Fry onions until golden brown color appears.
- Add lamb and fry it then cover it with water (10 cups).
- When the lamb is tender, add black pepper, salt, and
Maggie
cubes.
- Then add Jareesh
and stir gently on a low heat
- When the Jareesh is cooked, add 2 cups of plain cream yogurt and stir
gently.
- Slice 1 onion and fry it until it becomes dark.
- Heat 100 grams of butter, sprinkle dry lemon powder on top of the fried
onion (1tbsp.).
- Serve the Jareesh with the fried onion on top.
