Fattat Bathenjan (Eggplant)

Fattat Bathenjan


  • Eggplant - cut and fry
  • Plain Yogurt
  • Arabic bread - cut it into small squares and fry
  • chopped meat - cook it as in Samboosak
  • Fried garlic
  • Green coriander - chop it

Preparing the Tomato Souse

  • Tomato
  • Onion
  • Garlic
  • Salt and black pepper
  • Maggie
  • Powdered Lemon

Mix all the ingredients in a blender, and then put the mixture in a pot, add some oil, and cook it


  1. Put the fried eggplant in a Pyrex the add the souse on the top
  2. Spread the cooked meat and put the fried bread on the top
  3. Add yogurt on the top, then put a little bit of the souse as a decoration
  4. Finally, decorate the dish with the coriander and the fried garlic




  • 4 cups of flour
  • 2 spoons of Oil
  • Water
  • 1/2 kilo of chopped meat
  • 1 Onion and cut into small pieces
  • A little of parsley
  • Salt and pepper


  1. Cook the meat with the onion, and add a little bit of salt and pepper.
  2. When it well done, let it to cool and then chop some parsley and add
  3. Then, mix the flour, water, and oil together with a pinch of salt until the dough become soft
  4. form small balls and knead each one
  5. Stuff the meat and form the kneaded ball as a half moon
  6. Fry the Samboosak in a medium heat


Oven Baked Vegetables with Tomato Sauce


  • 2 carrots - cut in 4 pieces
  • 2 eggplants - cut in 4 pieces
  • 2 zucchinis - cut in 4 pieces
  • 2 potatoes - cut in 4 pieces
  • 4 green bell peppers - cut in 4 pieces

Preparing the Sauce:

  • 1 onion - cut in small squares
  • 4 pieces of minced garlic
  • 3 pieces of tomatoes - cut in small cubes.

Fry onion and garlic then add tomatoes. Put black vinegar, add Maggie cubes, salt, black pepper


  1. Fry all the vegetables then put in a Pyrex.
  2. Pour the tomato sauce on top of the vegetables.
  3. Put the Pyrex in oven until it is cooked


Aish Abulaham (bread with beef)


Aish Abulaham

Dough Ingredients:

  • 2 cups of flour
  • 4 tablespoons of powdered chick peas (hummos)
  • 4 tablespoons of powdered milk
  • 1 egg
  • 1 tablespoons of yeast
  • 1 tablespoons of salt
  • 2 tablespoons of oil

Preparation of the Stuffing :

  • Cut 1 onion into small pieces and mix it with 1/2 kilo of mince beef, salt, black pepper, sesame seed paste, 2 tablespoons of black vinegar, and green onion.
  • Mix all the ingredients together


  1. Mix the dough ingredients and add warm water
  2. kneed the mixture until it becomes soft
  3. Let it for 30 minutes till it rise
  4. Put dough in the Pyrex about 1/2 inch thick
  5. Then, put the stuffing on top
  6. Brush on top egg yolk and add sesame
  7. Put in the oven until it is cooked and served hot.



Baked Chicken with Vegetables

Baked Chicken

Ingredients :

  • 1 Whole chicken
  • 5 Cloves garlic (minced)
  • 2 maggie cubes
  • 1 tablespoon. salt
  • 1/2 tablespoon. Black pepper
  • 2 tablespoons of white vinegar
  • A pinch of saffron

    Vegetables :

    • 2 potatoes- cut in cubes
    • 2 carrots- cut in cubes
    • 1 green pepper cut into slices

Procedure :

  1. Clean the chicken and cut into 2 pieces.
  2. Marinate the chicken with all the spices above and put into oven for 40-50 minutes.
  3. Put vegetables in a pot, add a little bit of oil, cover and heat slowly until they tender.
  4. Then add the vegetables to the baked chicken and served hot.
